Fuul and Ta’amiyya: The Everyday National Foods
富爾與塔米亞——埃及人的日常國民美食
Fuul Medames(燉蠶豆) is one of Egypt’s oldest and most beloved foods. Fava beans are slowly cooked until soft, then seasoned with olive oil, lemon juice, cumin, garlic and sometimes chopped tomatoes or boiled eggs.
It may appear simple, but for many Egyptians, a bowl of fuul with warm bread is the taste of home.
Beside it is Ta’amiyya(埃及炸豆餅), Egypt’s distinctive version of falafel. Unlike the chickpea-based falafel common elsewhere in the Middle East, Egyptian ta’amiyya is usually made from crushed fava beans(蠶豆), mixed with coriander, parsley, leeks and spices, then fried until crisp outside and brilliantly green within.
Together, Fuul and Ta’amiyya(富爾與塔米亞) are often regarded as Egypt’s everyday national foods—affordable, nourishing and found everywhere from roadside stalls to family breakfast tables.
