茶--在西方世界

茶--在西方世界

Before Westerners knew how to drink tea, Eastern countries had been drinking tea for more than a thousand years, and it was not until the beginning of the 17th century that tea arrived in Britain for the first time. It is rumored that as early as 1596, Queen Elizabeth I of England sent a small team to investigate after learning about China's peculiar tea drinking habits, but the fleet never returned. It was not until 20 years later, when a Portuguese princess Catherine married to the United Kingdom, that there was a box of tea delivered by a Dutch merchant ship in her dowry, so she accidentally introduced the tea to the United Kingdom, and quickly became a luxurious drink for prince and aristocracy. At that time, a pound of tea sold for about a whole week’s wages for a craftsman.

British black tea must be brewed in a pot, even with tea bags. Daily drinking is ordinary tea bags, not premium tea. Only when you have a formal afternoon tea or a banquet, will you drink the real Darjeeling and other high-end tea. Drinking black tea is like drinking Chinese tea. It is necessary to smell its fragrance, observe its color, and appreciate its taste. After brewing the black tea, add a small amount of milk to the cup, watch the subtle changes in the color of the tea, and enjoy the taste of happiness.

It is usually blended with milk and sugar to make British milk tea, or it can be paired with lemon; it is the most representative national tea in the UK.

1. Early Tea: Gentle and refreshing when you wake up

The habit of drinking "morning tea" was first started by the nobles. When they woke up in the morning, butlers or maids would serve a cup, so that they would slowly wake up with a cup of tea before getting out of bed, and then change their clothes, so it is also called "Bed Side tea"「床邊茶」. As the tea-drinking culture spreads to the middle class and working class, bedside tea is also popular among partners and family members. People will give their families a cup of morning tea as a way of expressing concern.

Just like when we wake up early in the morning, we are also used to drinking a glass of boiling water to wake up our body, but if we are still drowsy after drinking water, we might as well try a sip of afternoon sugar-free black tea, gently awaken our minds with the charming black tea aroma, or Occasionally, when you want to be considerate of your family, send a cup of tenderness to convey your heart.

2. Breakfast Tea (Breakfast Tea): with breakfast more abundant

The British attach great importance to breakfast, so the traditional English breakfast is usually richer, including eggs, bacon, ham, and bread. It is served with a cup of "breakfast tea".  They would add milk and sugar to taste according to personal preference to replenish the energy to welcome the new day.

Modern people have a variety of choices for breakfast. If you want to eat lightly or richly, you can decide on the day. You can match the breakfast content with mellow afternoon black tea or rich afternoon milk tea to make the overall taste more divided, and taste the first delicacy of the day.

3. Eleven Tea/Break Tea: Take a break from work午前茶

At around eleven in the morning, the traditional British middle class will stop their work and take a break with a cup of "noon tea", also known as "eleventh tea" or "work break tea". At this time, they usually choose sweet ones. Tea is used to boost the spirit. Although it is a less formal tea time, just 15 minutes can make people more motivated to move forward.

When you find yourself immersed in work, you might as well remember to take a break and drink a refreshing sweet and sour lemon tea to invigorate your mood, or when you are still hungry for a while before eating, you can drink a slightly sweet afternoon milk tea to cushion your stomach. Adjust the status to make work more efficient.

4. Lunch Tea: add strength with lunch

Because the breakfast is very rich, British lunches are mostly light meals such as simple sandwiches and fruits, accompanied by a refreshing cup of "lunch tea", simply replenish their physical strength, and continue their busy work.

Modern eating habits are different. Lunches are mostly full-satisfying rice and pasta. Lighter salads and lunch boxes can be paired with slightly sweet afternoon black tea, or a more flavorful buffet, and lunches can be paired with no sugar in the afternoon. For black tea, the refreshing tea soup will slightly disperse the greasy sensation, leaving only the fresh aroma of black tea in your mouth.

Earl Grey 伯爵茶 is a blended black tea characteristic with citrus aroma. The formula designed for hard water is in line with the values required by the Western market.

"Earl Grey Tea" is an advanced tea gift given to Prime Minister Gray by the envoys of the late Qing Dynasty. However, from the literature, the addition of bergamot was not seen in the tea-making technology of China at that time. It should be invented by the British tea merchants imitating the special flavor of Chinese tea. People in the tea industry also speculated that the most likely scenario was that Earl Grey received the smoky Wuyishan Lapsang Souchong black tea 武夷山正山小種紅茶 at that time.

Lapsang Souchong and Qimen black tea 祁門紅茶as the base, together with Ceylon black tea and the essential oils of bergamot, citron, which are considered to have elegant aromas in the western world, are blended into a rich tea body to create unique and fragrant tea.

After being mass-produced by Twinings,  it has become popular with the market. Therefore, other tea companies such as Lipton, Tatelet, and French Marais 泰特萊、法國瑪黑have followed suit, making Earl Grey tea the evergreen tree in the western flavored tea industry, and it is still widely loved today. .

Nowadays, "Earl Grey tea" has become a synonym and index tea for all kinds of teas commonly added with citrus flavors.
